Tuscan Chicken And Beans Recipe
This is a recipe that I got from the grocery store a couple of years ago and we have it on a regular basis. It is only 247 calories per serving.

Ingredients
  • 1 sprig Fresh Rosemary
  • 1 lb frozen chicken tenderloin
  • cooking spray
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (19 oz) can of cannellini beans undrained
  • 1 cup chicken broth
  • 2 tablespoons chopped sun-dried tomatoes (not in oil)
  • 2 tablespoons cornstarch
  • 1/4 cup water

Directions
  1. Finely snip (rinsed) rosemary leaves, about 2 teaspoons. cut chicken into bite-sized pieces.
  2. Preheat large saute pan on medium high 2 - 3 minutes. Coat pan with cooking spray, add chicken, sprinkle with rosemary, salt and pepper. Cook 2 minutes stirring occasionally.
  3. Stir in beans, broth and tomatoes. Stir cornstarch and water together in a small bowl and slowly add to the pan stirring continuously. Heat to boiling; reduce heat to medium and simmer for 5 minutes.
