Ingredients
  • 6 medium aubergines (eggplant)
  • 3 large mature tomatoes
  • 1 large onion
  • 3 cloves garlic
  • 4 eggs
  • 2 cups grated feta cheese
  • 2 cups grated cheddar or edam
  • Olive oil
  • Salt & pepper to taste

Directions
  1. Pour 1/2 cup of olive oil in a sauce pan and turn on the gas.
  2. Preheat oven to high.
  3. Peel the onion, cut in two and throw in a blender.
  4. Peel garlic, cut up and throw in blender.
  5. Cut the tomatoes in 4 and throw in the same blender. Blend until fairly chopped.
  6. Pour tomato mix in the saucepan, stir, cover with lid and let it boil for 5 minutes on hight heat.
  7. Peel the aubergines and cut them in 1/4 inch - 0.5 cm slices.
  8. Take a deep baking pan or pyrex and with a greased cover oil the surface.
  9. Make a layer of aubergines and pour as much tomato sauce on them as to cover them up. Throw 2 handfulls of both cheeses on top.
  10. Make another 2 layers of aubergines and repeat with the tomato and cheese.
  11. In a bowl beat the eggs and pour on top of the tomato sauce.
  12. Bake in the oven on high heat for 30-35 minutes. Bonne Appetite!

Hey jett! The original name for this recipe was "Mediterranean Aubergines" I would have called it eggplant had it been my own recipe (aubergine's kinda pinkie in the air ;) know what I mean lol) but since it wasn't I didn't want to change it and possibly step on anyone's toes. Instead I tagged it with "Monk's Moussaka" cos when I read the recipe I thought it sounded so much like a meatless moussaka. Juliecake, thanks for the 'translation' lol


Hi Dana. At first glance I too wondered what Aubergine's were. So I looked them up on Ashbury's Aubergine's! Oh, it's eggplant! How yummy! I had never heard of Moussaka either. This dish sounds exquisite. I'm going to try it this summer. Hugs!
