Tequila-Lime Marinated Shrimp and Scallops with Lemongrass-Scented Coconut Rice

- seafood shopping list
- * 1 pound large shrimp shopping list
- * 1 pound scallops shopping list
- * 1/4 cup fresh lime juice shopping list
- * 1/4 cup tequila shopping list
- * 2 medium garlic cloves, minced shopping list
- * 1/4 cup chives, minced shopping list
- * 2 teaspoons whole cumin shopping list
- * salt and freshly ground black pepper shopping list
- * 1/2 cup olive oil shopping list
- rice shopping list
- * 2 cups red cargo rice, rinsed and soaked at least 30 minutes in water shopping list
- * 1 can coconut milk shopping list
- * 2 T brown sugar shopping list
- * 1/2 tsp salt (adjust later to taste) shopping list
- * 3 stalks lemongrass, dried or fresh shopping list
- * 1 cup white long grain rice shopping list
- * 8 cups water shopping list
- Plating shopping list
- * 1/2 cup cilantro/coriander leaves shopping list
- * 1/4 cup peanuts, toasted shopping list
- * lime wedges (optional) shopping list
How to make it
- Seafood
- Whisk together the lime juice, tequila, garlic, chives, cumin, salt, and pepper. Slowly add the olive oil, whisking until combined. Taste for seasoning.
- Pour over the seafood and marinate for at least ½ and up to 4 hours.
- Saute the seafood on each side for about 4 minutes or to desired doneness.
- Rice
- In a rice steamer place water and lemongrass stalks. Combine red rice, coconut milk, sugar and salt. Steam about 50 minutes or to desired doneness. After about 20 minutes add in white rice and continue cooking until done.
- Plating
- Place rice on a platter and top with seafood, cilantro and peanuts. Garnish with lime wedges.
