Ingredients
  • Seafood
  • * 1 pound large shrimp
  • * 1 pound scallops
  • * 1/4 cup fresh lime juice
  • * 1/4 cup tequila
  • * 2 medium garlic cloves, minced
  • * 1/4 cup chives, minced
  • * 2 teaspoons whole cumin
  • * salt and freshly ground black pepper
  • * 1/2 cup olive oil
  • Rice
  • * 2 cups red cargo rice, rinsed and soaked at least 30 minutes in water
  • * 1 can coconut milk
  • * 2 T brown sugar
  • * 1/2 tsp salt (adjust later to taste)
  • * 3 stalks lemongrass, dried or fresh
  • * 1 cup white long grain rice
  • * 8 cups water
  • Plating
  • * 1/2 cup cilantro/coriander leaves
  • * 1/4 cup peanuts, toasted
  • * Lime wedges (optional)

Directions
  1. Seafood
  2. Whisk together the lime juice, tequila, garlic, chives, cumin, salt, and pepper. Slowly add the olive oil, whisking until combined. Taste for seasoning.
  3. Pour over the seafood and marinate for at least ½ and up to 4 hours.
  4. Saute the seafood on each side for about 4 minutes or to desired doneness.
  5. Rice
  6. In a rice steamer place water and lemongrass stalks. Combine red rice, coconut milk, sugar and salt. Steam about 50 minutes or to desired doneness. After about 20 minutes add in white rice and continue cooking until done.
  7. Plating
  8. Place rice on a platter and top with seafood, cilantro and peanuts. Garnish with lime wedges.

Great recipe, Hubby took over and cooked it for our family last night, we used scallops and fish, we dont have a rice steamer so we cooked the rice in the coconut milk till mostly absorbed then put rice into the veg steamer pot over the lemongrass to finish it off. Worked ok, the rest of the bottle of tequilla went down in shots ... great recipe for a great night...
