If you've ever been to Maine, word is this is the best Lobster pie in the state....Got this from a friend who has had more than one pie.

Ingredients
  • 5 (1 pound) lobsters
  • 2 sticks butter
  • 2 tablespoons lemon juice, fresh
  • 3 cups crushed Ritz crackers
  • Parsley, to garnish
  • Lemon wedges, to garnish

Directions
  1. Steam lobsters in salted water 12-15 minutes, or until done
  2. Let cool
  3. Over a bowl that can hold the juices, pick out the meat from the tails, knuckles and claws
  4. Reserve the tomalleys
  5. Melt butter in skillet
  6. Stir in the tomalleys and lemon juice
  7. Remove from heat
  8. Stir in the crushed crackers
  9. Add enough reserved lobster juice so the mixture is moist and thick, somewhat like stuffing.
  10. Divide lobster meat between 4 individual casseroles
  11. Cover with the cracker mixture, patting it on evenly
  12. Bake at 425°F for 10 minutes or until cracker is golden brown Garnish with parsley and lemon wedges.
