Roasted Cream Cheese N Chive Mashed Potoatoes Recipe

A variation of the roasted buttermilk mashed potatoes (posted) that I came up with when I didn't have buttermilk, and was using what I had.

Ingredients
- 6-7 cups yukon gold potatoes peeled and cut into chunks
- 2 tbs olive oil
- Seasoned Salt
- Pepper
- 4 oz cream cheese
- Half and Half (to consistency)
- 3 T chives
Directions
- Directions
- Preheat oven to 425
- Cut potatoes into bowl of ice cold water
- Drain and toss with oil, seasoned salt and pepper
- Pour onto baking pan
- Place on lowest rack for best browning
- Roast for 40-45 min turning once
- Mash potatoes in a large bowl leaving them slightly chunky
- Stir in cream cheese, chives and half and half
- Mash together, leaving them slightly thick
