  • Directions
  • Preheat oven to 425
  • Cut potatoes into bowl of ice cold water
  • Drain and toss with oil, seasoned salt and pepper
  • Pour onto baking pan
  • Place on lowest rack for best browning
  • Roast for 40-45 min turning once
  • Mash potatoes in a large bowl leaving them slightly chunky
  • Stir in cream cheese, chives and half and half
  • Mash together, leaving them slightly thick
