Roasted Cream Cheese n Chive Mashed Potoatoes

- 6-7 cups yukon gold potatoes peeled and cut into chunks shopping list
- 2 tbs olive oil shopping list
- seasoned Salt shopping list
- pepper shopping list
- 4 oz cream cheese shopping list
- Half and Half (to consistency) shopping list
- 3 T chives shopping list
How to make it
- Directions
- Preheat oven to 425
- Cut potatoes into bowl of ice cold water
- Drain and toss with oil, seasoned salt and pepper
- Pour onto baking pan
- Place on lowest rack for best browning
- Roast for 40-45 min turning once
- Mash potatoes in a large bowl leaving them slightly chunky
- Stir in cream cheese, chives and half and half
- Mash together, leaving them slightly thick
