Taken from the book " If The Buddha Came To Dinner" By Hale' Sofia Schatz with Shira Shaiman This broth is rich in potassium and other minerals, for cleansing any time of year,when you are feeling a bit run down.

Ingredients
  • 3-4 Large kale leaves
  • 1 bunch beet greens
  • 4 stalks celery
  • 1 bunch parsley
  • 8 cups water
  • Or any of the following:
  • 2 small leeks, rinsed thoroughly, roots trimmed, and cut in half
  • 1/2 bunch scallions
  • 1 bunch watercress
  • 2-3 collard green leaves

Directions
  1. Wash all of the greens and cut the celery in half.
  2. Place the vegetables into a soup pot and add the water.
  3. *( the pot should be no more than 3/4 full).
  4. Bring to a boil and reduce to a simmer for2 hours.
  5. Use the liquid only and discard the vegetables after all the broth has been consumed,
  6. * Drink this broth as a tea throughout the day .
