Pecan Joys Recipe
I call these pecan joys because they're kinda like an almond joy candy bar, except with pecans! these are chewy bar cookies with pecans, chocolate, and coconut. yummmm!

Ingredients
  • 1 box JIFFY yellow cake mix...this is a small box, just a 1 layer cake mix, so if you use a regular box of cake mix, like betty crocker or duncan hines, i'd suggest that you use more pecans, coconut, and chocolate :]
  • 1/3 cup oil
  • 2 eggs
  • 2/3 cup pecans
  • 2/3 cup coconut flakes
  • 1 cup chocolate chips, chunks, whatever you like

Directions
  1. Preheat oven to 350
  2. combine all ingredients in a bowl
  3. pour into an 8X8 or 9X9 baking dish.
  4. bake 15 minutes or so, until it's cooked the way you like....more time for crispier cookies, less for chewy
  5. let cool in pan on wire racks, then slice when completely cool
  6. enjoy!

Is this using a one layer cake mix? I want to be sure before I make it because it sure sounds good!


I edited the ingredients to clarify that the jiffy cake mixes are just 1 layer mixes. thanks michelle73 for pointing that out! and as a side note, these taste a lot like the "paradise pies" from chili's....

I did make these the other day, I will post a blog on them soon (elsepeth27.blogspot.com). I substituted some ingredients and "created" a cake mix from a cake recipe. If you're interested in the results, please take a look, the post will hopefully be up tomorrow or Saturday. :) Thanks for a tasty different recipe!


I made Pecan Joys yesterday and am very sorry to say that I was disappointed with the finished product. Although they tasted great with the chocolate, coconut, pecan combination, the texture did not turn out like a chewy bar cookie. They were very crumbly and just fell apart when I tried to cut them. It seems like there are not enough “wet” ingredients in this recipe. Even when I was mixing it, it was dry and not forming a dough. I added a little milk, but apparently not enough. I’m not giving up, though. I really want this recipe to work because it’s so simple and so tasty. Next time I may try mixing the cake mix with the wet ingredients thoroughly before adding the nuts and chocolate. Does anyone have suggestions for how to make this turn out better?
