How to make it
- Clean artichokes and eliminate external and less tender leafs.
- Put artichokes in abundant boiling salt water for 6-7 minutes.
- Dry artichokes using a cloth and then fry them in extra virgin olive oil at 170°.
- Season with salt and pepper ans serve hot.

I just asked another person for this recipe because I didn't see this one. I had these many times while visiting Rome. There was one ristorante that made them particularly well in the Jewish Ghetto.
