This is a "must" every year during rhubarb season. The filling makes a crunchy, light, delicate top, and the crust is sweet and soft.

Ingredients
  • Crust:
  • 1 cup flour
  • 5 tablespoons powdered sugar
  • ½ butter, softened
  • Filling:
  • 2 eggs, beaten
  • 1½ cups sugar
  • ¼ cup flour
  • ½ teaspoon salt
  • 2 cups finely chopped rhubarb

Directions
  1. Cream together all crust ingredients. Press dough into a 7x11 pan. Bake at 350 degrees for 15 minutes. While crust is baking, prepare filling.
  2. Beat eggs and add sugar, flour and salt. Gently fold in rhubarb; spoon filling over hot crust. Bake for an additional 35 minutes.
  3. Cool completely before cutting into bars.
