Rhubarb Dream Bars Recipe

This is a "must" every year during rhubarb season. The filling makes a crunchy, light, delicate top, and the crust is sweet and soft.

Ingredients
- Crust:
- 1 cup flour
- 5 tablespoons powdered sugar
- ½ butter, softened
- Filling:
- 2 eggs, beaten
- 1½ cups sugar
- ¼ cup flour
- ½ teaspoon salt
- 2 cups finely chopped rhubarb
Directions
- Cream together all crust ingredients. Press dough into a 7x11 pan. Bake at 350 degrees for 15 minutes. While crust is baking, prepare filling.
- Beat eggs and add sugar, flour and salt. Gently fold in rhubarb; spoon filling over hot crust. Bake for an additional 35 minutes.
- Cool completely before cutting into bars.
