Ingredients
  • Butterscotch:
  • 1 3/4 c brown sugar
  • 3/4 c nonfat dry milk powder
  • 1 c cornstarch
  • 1/4 t salt
  • Combine all ingredients and store in container with a tight-fitting lid. Makes 3 cups mix, yielding 24 servings of prepared pudding.
  • Stir mix well. For 2 servings, combine 1/4 c mix, 2 T butter, and 1 c milk in small saucepan. Heat over low heat, stirring contantly, until mixture boils. Boil gently, stirring constantly, for one minute. Pour into serving dishes and chill until thickened.
  • Chocolate:
  • 2 c sugar
  • 1 c cocoa
  • 2/3 c cornstarch
  • Makes 3 c mix yielding 12 servings of prepared pudding.
  • For 2 servings combine 1/2 c mix, 4 T butter and 1 1/3 c milk. Cook as above.
  • Coconut Cream:
  • 1/2 c coconut
  • 1 1/2 c nonfat dry milk powder
  • 1 c sugar
  • 1 c cornstarch
  • 1/2 t salt
  • Place coconut in blender and process until finely ground. Combine with remaining ingredients. Makes 2 1/3 c mix yielding 24 servings of prepared pudding.
  • For 2 servings combine 2/3 c mix and 1 c milk. Cook as above.
  • Vanilla:
  • 1 1/2 c nonfat dry milk powder
  • 1 c sugar
  • 1 c cornstarch
  • 1/2 t salt
  • Makes 3 c mix yielding 24 servings of prepared pudding.
  • For 2 servings combine 1/4 c mix and 1 c milk, cook as above except add 1/4 t vanilla after removing from heat.

Directions

  3. Can be used for pie, just adjust serving amount.

I tried this this morning and increased the recipe just a little. I added some french vanila choclate to the mix and a couple teaspoons of butter it was perfect and very delicious.

Alterations


However I'll be changing the cornstarch out for arrowroot starch as my family is allergic to corn.


add a teaspoon or two of butter or margerine to the mix for a creamy and rich texture.
