How to make it

  • Pierce potatoes with a fork and wrap individually in a double thickness of paper towels.
  • Microwave on high for 5 minutes.
  • Rotate potatoes and microwave on high until tender about 5 minutes longer.
  • Unwrap potatoes and let cool slightly then cut off a 1/4" thick slice along top of each potato.
  • With a spoon carefully hollow out potatoes leaving the shells.
  • Put insides in a medium bowl and mash with a fork or potato masher.
  • Add sour cream, buttermilk, cilantro and salsa then mix well.
  • Season with salt and pepper and fill shells with potato mixture.
  • Arrange potatoes in a microwave safe pie plate or baking dish then cover with vented plastic wrap.
  • Microwave on high for 5 minutes then sprinkle with cheese and serve.
