- 4 baking potatoes scrubbed shopping list
- 1/3 cup sour cream shopping list
- 1/4 cup buttermilk shopping list
- 2 tablespoons fresh cilantro chopped shopping list
- 2 tablespoons tomato salsa shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/2 cup pepper jack cheese grated shopping list
How to make it
- Pierce potatoes with a fork and wrap individually in a double thickness of paper towels.
- Microwave on high for 5 minutes.
- Rotate potatoes and microwave on high until tender about 5 minutes longer.
- Unwrap potatoes and let cool slightly then cut off a 1/4" thick slice along top of each potato.
- With a spoon carefully hollow out potatoes leaving the shells.
- Put insides in a medium bowl and mash with a fork or potato masher.
- Add sour cream, buttermilk, cilantro and salsa then mix well.
- Season with salt and pepper and fill shells with potato mixture.
- Arrange potatoes in a microwave safe pie plate or baking dish then cover with vented plastic wrap.
- Microwave on high for 5 minutes then sprinkle with cheese and serve.
