Mint Ravioli Cookies

- 1/2 cup margarine or butter, softened shopping list
- 1/2 cup shortening shopping list
- 1 cup sugar shopping list
- 1 egg shopping list
- 2 1/2 cups all-purpose flour shopping list
- 1 tsp. baking powder shopping list
- 1/4 tsp. salt shopping list
- 3 dozen rectangular chocolate mints shopping list
How to make it
- Mix margarine or butter, shortening, sugar and egg in large bowl.
- Stir flour, baking powder and salt.
- Cover and refrigerate about 1 hour or until firm.
- Heat oven 400 degrees.
- Roll half of dough into rectangle, 13X9-inches, on floured surface.
- Place mints on dough, forming 6 uniform rows of 6.
- Roll remaining dough into rectangle, 13X9-inches, on floured waxed paper.
- Place over mint-covered dough and remove waxed paper.
- Cut between mints with pastry wheel or knife and press edges with fork to seal.
- Place on ungreased cookie sheet.
- Bake 7 to 9 minutes or until light brown.
- Remove from cookie sheet.
