Mint Ravioli Cookies Recipe
An attractive cookie with a minty surprise in the middle! Betty Crocker's Best Of Baking.

Ingredients
  • 1/2 cup Margarine or Butter, softened
  • 1/2 cup Shortening
  • 1 cup Sugar
  • 1 Egg
  • 2 1/2 cups All-Purpose Flour
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 3 dozen rectangular Chocolate Mints

Directions
  1. Mix margarine or butter, shortening, sugar and egg in large bowl.
  2. Stir flour, baking powder and salt.
  3. Cover and refrigerate about 1 hour or until firm.
  4. Heat oven 400 degrees.
  5. Roll half of dough into rectangle, 13X9-inches, on floured surface.
  6. Place mints on dough, forming 6 uniform rows of 6.
  7. Roll remaining dough into rectangle, 13X9-inches, on floured waxed paper.
  8. Place over mint-covered dough and remove waxed paper.
  9. Cut between mints with pastry wheel or knife and press edges with fork to seal.
  10. Place on ungreased cookie sheet.
  11. Bake 7 to 9 minutes or until light brown.
  12. Remove from cookie sheet.
