This dish is one of my favorites. The flavors go together well. To mix it up a bit try different types of cheese. Even my picky son likes it!

Ingredients
  • 10 ounces spinach (chopped, frozen)
  • 8 ounces cream cheese
  • 1/2 cup sour cream
  • 3 tablespoons milk
  • 3 tablespoons onion (minced)
  • 4 ounces wide noodles
  • 1 pound ground beef
  • 15 ounces tomato sauce
  • 2 teaspoons sugar
  • garlic powder to taste
  • salt and black pepper to taste
  • cheddar cheese enough to cover top of casserole

Directions
  1. Cook and drain spinach.
  2. Mix cream cheese, sour cream, milk and onion in separate bowl and let set to soften.
  3. Cook noodles in boiling water for 10 minutes.
  4. Drain.
  5. Brown beef and drain well.
  6. Add tomato sauce, sugar, garlic powder, salt, pepper and noodles.
  7. Heat through.
  8. In 2 quart casserole, place a layer of the meat-noodle mixture (use 1/2).
  9. Top with 1/2 of the cream cheese mixture.
  10. Top with all of spinach and finish with remainder of meat-noodles.
  11. Cover and bake at 350 for 40 minutes.
  12. Remove from oven and top with remaining cream cheese mixture.
  13. Cover completely with cheddar.
  14. Return to oven uncovered until cheese melts completely (about 5-10 min.)

Hey, I did it. When I began layering it in the dish, I thought, oh,no, another beef n' mac - BUT NO! It was FINE! My husband really liked it, too. I did it slightly differently: I added the salt to the hamburger as it cooked, then the onions, a clove of garlic (instead of garlic powder), and mushrooms.


Yay! Yum!


This was great! My family loved it and had seconds and they aren't big spinach eaters. Will be making again. Thanks!
