Chicken Merlot with Mushrooms

- 51/4 cups sliced fresh mushrooms shopping list
- 1c chopped onion shopping list
- 2tsp minced garlic shopping list
- 3lbs boneless skinless chicken thighs shopping list
- 1 can(6oz) tomato paste shopping list
- 3/4c chicken broth shopping list
- 1/4c merlot wine or additional chicken broth shopping list
- 2Tbs quick-cooking tapioca shopping list
- 2tsp sugar shopping list
- 11/2tsp dried basil shopping list
- 1/2tsp salt shopping list
- 1/4tsp pepper shopping list
- 2Tbs grated parmesan cheese shopping list
- Hot cooked pasta,optional shopping list
How to make it
- Place the mushrooms,onion and garlic in a 5qt. slow cooker. Top with chicken.
- In a small bowl, combine the tomato paste,broth,wine or additional broth,tapioca,sugar,basil,salt and pepper. Pour over the chicken Cover and cook on low for 5-6 hours or until chicken is tender.
- Sprinkle with parmesan cheese. Serve with pasta if desired.
