How to make it

  • In small bowl, stir together soy sauce, sherry, sugar, cornstarch, white pepper, pepper flakes, mustard, and water until sugar dissolves. Set aside
  • Heat oil in large skillet over high heat until just smoking. Add beans and cook, stirring frequently, until cris-tender and skins are shriveled and blacked in spots. Transfer to bowl.
  • Reduce heat to medium-high and add pork to empty skillet. Cook, breaking pork into small bits. Add garlic and ginger; cook, stirring constantly 15 to 20 seconds. Stir sauce, add beans back to pan and pour sauce over. Toss and cook until sauce is thicked. Remove pan from heat and stir in green onions and sesame oil. Serve immediately over rice.
