Caribbean Chicken

- 8 skinless chicken drumsticks shopping list
- 2 limes shopping list
- 1/4 tsp. cayenne pepper shopping list
- 2 medium mangoes shopping list
- 1 Tbs. sunflower oil shopping list
- 2 Tbs. dark brown sugar shopping list
- 2 Tbs. coarsely grated coconut shopping list
How to make it
- Slash chicken at intervals.
- Place Chicken in a large bowl.
- Grate the rind from the limes and set aside.
- Squeeze the juice from the limes and sprinkle it over the chicken, together with the cayenne pepper.
- Cover and chill in the refrigerator for two hours or overnight.
- Peel and slice the mangoes.
- Drain the chicken, reserving the marinade.
- Heat the oil in a wide heavy pan and saute the chicken, turning frequently, until golden.
- Stir in the reserved marinade, lime rind, mango slices, and the brown sugar.
- Cover and simmer gently, stirring occasionally, for 15 minutes, or until the juices run clear when the chicken is pierced.
- Transfer to a serving dish and serve immediately, sprinkled with coconut.
