Caribbean Chicken Recipe
Any cut of of chicken can be used for this dish. The coconut and mango give it a delicious tropical flavor. Classic Chicken Recipes.

Ingredients
  • 8 skinless Chicken Drumsticks
  • 2 Limes
  • 1/4 tsp. Cayenne Pepper
  • 2 medium Mangoes
  • 1 Tbs. Sunflower Oil
  • 2 Tbs. Dark Brown Sugar
  • 2 Tbs. coarsely grated Coconut

Directions
  1. Slash chicken at intervals.
  2. Place Chicken in a large bowl.
  3. Grate the rind from the limes and set aside.
  4. Squeeze the juice from the limes and sprinkle it over the chicken, together with the cayenne pepper.
  5. Cover and chill in the refrigerator for two hours or overnight.
  6. Peel and slice the mangoes.
  7. Drain the chicken, reserving the marinade.
  8. Heat the oil in a wide heavy pan and saute the chicken, turning frequently, until golden.
  9. Stir in the reserved marinade, lime rind, mango slices, and the brown sugar.
  10. Cover and simmer gently, stirring occasionally, for 15 minutes, or until the juices run clear when the chicken is pierced.
  11. Transfer to a serving dish and serve immediately, sprinkled with coconut.
