One-Eyed Sailor Recipe
This one is in my Paula files. I liked it and We had it at the resturant.Was a big hit!

Ingredients
  • 2 slices thick country bread
  • 4 tablespoons butter
  • 2 eggs
  • Salt and pepper
  • .......Cheese sauce, recipe .......
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups warm milk
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon dry mustard
  • Dash hot sauce (recommended: Tabasco)
  • Dash Worcestershire sauce
  • 2 cups grated Cheddar
  • 1/2 cup freshly grated Parmesan
  • Salt and freshly ground black pepper

Directions
  1. Using a biscuit cutter, cookie cutter, or mold, cut a nice hole in the
  2. center of the bread. Butter both sides of bread and place in a cast iron saute pan over medium heat.
  3. Crack the eggs into the holes and season with salt and pepper. Once the egg starts to set, flip over and continue cooking
  4. the other side until set. Serve with Cheese Sauce.
  5. In a small saucepan, melt the butter over medium heat and stir in the flour. Cook until smooth and bubbly, about 1 minute. Gradually add the warm milk and stir until combined.
  6. Stir in the seasonings and cheese. Constantly stir until cheese is smooth, thick and melted.
  7. Yield: 4 servings

Oh man talk about childhood memories! I remember my mom makin' eggs like this when I was a kid...sans the cheese sauce, but still, I can't wait to try these out. Thanks for the memories and the cool post.

Reminds me of Toad in the Hole, but yummier! Cheese sauce is a man's best friend!
