For that kind of night that you just don't feel like getting out the pots and pans and cleaning up, this dish is fast and the clean-up is easy!

Ingredients
  • 1 package of fresh chicken~breasts, thighs or a combination, whatever you like best
  • 2 tsp Italian seasoning
  • freshly ground black pepper, to taste
  • A bottle of Italian dressing~I use Wishbone's Fat Free
  • Fresh,chopped Italian parsley and grated Parmesan cheese, for garnish (in place of parsley you can use fresh basil for garnish, if you have it)
  • Optional:
  • You can add anything else you like about mid-way through roasting the chicken. I always have cherry or grape tomatoes so I toss those in for the last 15-20 minutes or so

Directions
  1. Preheat oven to 350 degrees
  2. Spray a 9 x 13 inch baking dish or any other kind of ovenproof dish with non-stick spray
  3. Pour some of the Italian dressing in the bottom of the pan to coat lightly
  4. Season both sides of the chicken pieces with the Italian seasoning and some fresh black pepper
  5. Lay the chicken pieces in the pan and pour more dressing on top
  6. Roast in oven for 60 minutes or so (depending on how large the pieces are that you are using)
  7. Occasionally during cooking, spoon some of the sauce over the top of the meat and add some more dressing when needed
  8. Here's when you can add some tomatoes or other cooked vegetables, if desired
  9. When chicken is done it should be golden brown; remove from oven
  10. Place on serving plates and sprinkle with the fresh parsley or basil and some grated Parmesan cheese
  11. Serve with some crusty bread or a green salad. Easy!!

Always good to have a fast on hand ingredients recipe for when it's really late and you just got back from driving four hours from somewhere and you need to feed the folks some grub in a hurry!

Alterations


you can throw potatoes and carrots in... and try dry italian seasoning over top and parmesan cheese (along with the bottled italian salad dressing)! mmmmm good! it works better with chicken with a bone in cause it doesn't dry out as much!
