Lazy Night Chicken Italiano

For that kind of night that you just don't feel like getting out the pots and pans and cleaning up, this dish is fast and the clean-up is easy!

1 package of fresh chicken~breasts, thighs or a combination, whatever you like best shopping list
2 tsp italian seasoning shopping list
freshly ground black pepper, to taste shopping list
A bottle of Italian dressing~I use Wishbone's Fat Free shopping list
Fresh,chopped Italian parsley and grated parmesan cheese, for garnish (in place of parsley you can use fresh basil for garnish, if you have it) shopping list
Optional: shopping list
You can add anything else you like about mid-way through roasting the chicken. I always have cherry or grape tomatoes so I toss those in for the last 15-20 minutes or so shopping list

Preheat oven to 350 degrees
Spray a 9 x 13 inch baking dish or any other kind of ovenproof dish with non-stick spray
Pour some of the Italian dressing in the bottom of the pan to coat lightly
Season both sides of the chicken pieces with the Italian seasoning and some fresh black pepper
Lay the chicken pieces in the pan and pour more dressing on top
Roast in oven for 60 minutes or so (depending on how large the pieces are that you are using)
Occasionally during cooking, spoon some of the sauce over the top of the meat and add some more dressing when needed
Here's when you can add some tomatoes or other cooked vegetables, if desired
When chicken is done it should be golden brown; remove from oven
Place on serving plates and sprinkle with the fresh parsley or basil and some grated Parmesan cheese
Serve with some crusty bread or a green salad. Easy!!

Hi everyone! I think I should have increased the cooking time in this because I made it last night with some large, meaty thighs and it took a little over an hour to finish. Sorry about that! Kathye

Always good to have a fast on hand ingredients recipe for when it's really late and you just got back from driving four hours from somewhere and you need to feed the folks some grub in a hurry!
