Really great dish that can be the main attraction or used as a side dish.

Ingredients
  • 1 3/4 Cups crushed cheese flavored crackers
  • 6 Tblsp. butter, melted
  • 2 2/3 Cups chopped Vidalia Onion (Spanish fine too)
  • 1 Cup milk
  • 1-2 Tblsp. butter, melted
  • 1/2 tsp. Italian seasoning
  • 3/4 Cup shredded sharp cheddar cheese
  • 1/4 tsp. salt
  • 3 eggs, beaten
  • 1/8 tsp. pepper

Directions
  1. Combine cracker crumbs and 6 Tblsp. melted butter
  2. Mix well
  3. Press into bottom and side of 9" pie plate.
  4. Bake at 350 for 5 minutes
  5. Saute onions in 1-2 Tblsp. butter until tender
  6. Remove from heat
  7. Stir in cheese
  8. Spoon into prepared crust
  9. Combine eggs, milk and seasonings
  10. Pour over onion cheese mixture
  11. Bake at 375 for 30 minutes or until set
  12. Let stand 10 minutes before serving

This is an HONEST 5 star rating. I made this this evening for dinner and it was a total hit with everyone. One of my daughters suggested we mix shredded potatoes and onions together next time so we might try it that way too but it is GREAT just as written.
