Mediterranean Orzo Salad

- 1 cup orzo uncooked shopping list
- 3 tablespoons red onion finely chopped shopping list
- 1 cup fresh tomatoes seeded and chopped shopping list
- 1/4 cup chopped celery shopping list
- 2 tablespoons chopped fresh basil shopping list
- 2 tablespoons olives pitted and finely chopped shopping list
- 2 tablespoons capers shopping list
- 1 teaspoon grainy spicy mustard shopping list
- 1/4 teaspoon granulated sugar shopping list
- 1 tablespoon balsamic vinegar shopping list
- 2 tablespoons garlic oil shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3-1/2 ounces chevre cheese crumbled shopping list
How to make it
- Bring a large quantity of water to a boil and cook orzo just until tender.
- Drain well and allow to cool then mix with onion, tomatoes, celery, basil, olives and capers.
- Whisk together mustard, sugar and vinegar then gradually beat in oil until emulsion forms.
- Pour vinaigrette over pasta mixture and season with salt and pepper then chill salad.
- When it is cold mix in the crumbled cheese and serve.

This is a winner on all levels...;-) We make this quite often in the summer. As a variation try browning half the orzo in some Olive Oil before cooking. It adds a nice a nice color variation and a slight nutty flavor.... Great post.... ;-)~
