How to make it

  • Place pineapple chunks in a blender or food processor and process until smooth.
  • Combine pineapple puree, 3 cups pineapple juice and next 4 ingredients in a large bowl.
  • Pour pineapple mixture into a 13 x 9 baking dish; cover and freeze at least 8 hours or until firm.
  • Remove frozen pineapple mixture from freezer.
  • Scrape entire mixture with a fork until fluffy.
  • Spoon mixture into a freezer-safe container; cover and freeze up to 1 month.
  • Garnish with mint sprigs, if desired.
  • Yields 16 servings. Serving size 1/2 cup. Points = 2.

    What a great warm weather addition to the freezer, for those days when you just can't turn on the oven but you want a sweet treat (the rum "kick" is an added bonus) - sounds delicious!
