Fantastic Blueberry Muffins

Fantastic!! This is our new family favorite. Muffins have great flavor and a good crumb topping. Enjoy
Ingredients
- 2 c flour shopping list
- 1/2 c sugar shopping list
- 3 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 egg, well beaten shopping list
- 2/3 c milk shopping list
- 1/3 c oil or melted shortening shopping list
- 1 c fresh or 3/4 c frozen blueberries shopping list
- 1/2 tsp flour to dust blueberries shopping list
- Streusel Topping: shopping list
- 1/4 c sugar* shopping list
- 1 tbsp butter, softened shopping list
- 1/2 tsp cinnamon (or more if preferred) shopping list
- 1/4 c chopped nuts shopping list
How to make it
- Preheat to 400.
- Line muffin tin with 12 muffin papers
- Combine flourk sugar, baking powder and salt. Mix.
- Stir in egg, milk and oil. Mix until just moistened.
- Combine blueberries with 1/2 tsp flour. Carefully stir in blueberries.
- Spoon batter into muffin cups about 2/3 full.
- Prepare streusel - combine dry ingredients and stir.
- Cut in butter until it looks like coarse crumbs.
- Sprinkle evenly over tops of muffins.
- Bake for 20 to 25 minutes or until golden brown.
- Serve warm.
- I used muffin papers and lightly sprayed them before filling.
- I used lowfat milk, large egg and frozen berries.
- *Original streusel topping calls for brown sugar.
