Mashed Sweet Potatoes With Coconut Milk Recipe
An extremely simple and uniquely flavorful side. Known as piele in Hawaii, it does have coconut milk but is mild enough for those that don't usually like coconut. Full of fiber, vitamins and the ginger is great for digestion.

Ingredients
  • 1 ½ lbs sweet potatoes (about 3 medium)
  • ¾ c. coconut milk
  • 1 Tablespoon minced fresh ginger
  • ½ teaspoon salt

Directions
  1. 1. Prick sweet potatoes with a fork in several places. Place in baking dish and bake at 425ºF until tender all the way to the center, about 1 hour.
  2. 2. When cool enough to handle, peel off and discard skin. Transfer the sweet potatoes to a medium bowl and mash thoroughly with a potato masher. Add coconut milk, ginger and salt; stir well. Reheat in the microwave for 1-2 minutes or in the oven for 8-10 minutes. Serve warm.

Simple,easy and sounds delicious! I do like sweet potatoes a lot.


Yum! I love the skins though, so I may have to leave some of them in! I have a can of light coconut milk that keeps staring at me in the pantry, and now I have a use for it!


I think I would love this, and as you say, it is so easy! And yes, ginger (fresh) is great for the digestion process! Great recipe and great for our new digestion group Breeze!
