Can't be Summertime with out Cornbread! *wink* Be sure and get the cast iron good and hot, as that’s what sears the batter and makes for a crispy, crunchy crust.

I like cornbread, and this one looks really good! I think the bacon drippings are a must. The only thing I use my cast iron skillet for is fried chicken. I was raised in the North East so cornbread was not a staple, but I do love it and being here close to the border, a jalapeno pepper would probably find its way into the batter...LOL!
