Great sauce to spice up chicken or beef.

Ingredients
  • 500g hot red chillis
  • 1 tsp crushed dried chillis
  • 1 tsp hot chilli powder
  • 3/4 cup white wine
  • 2 cloves garlic
  • Olive Oil
  • 4 Shallots
  • Sugar (to taste)
  • Salt (to taste)
  • Ground Black Pepper

Directions
  1. Heat 1 tbsp olive Oil
  2. Finely chop the Shallots and chilli’s (you could use a blender for this)
  3. Add the chilli’s and shallots to the oil
  4. Finely chop the garlic and add to the oil/shallots/chilli’s
  5. Sweat on a high heat for 5 mins
  6. Add the Chilli powder and crushed chillis and 1/2 tsp of ground black pepper and a touch of salt.
  7. Add the white Wine and reduce down for about 5 to 8 mins
  8. Allow to cool for 10 mins then belnd to a paste (careful not to splash any in your eye when blending this ... it hurts !!!)
  9. Allow to cool and mix with a dash of olive oil and keep refrigerated.
