My mom made this recipe for Sunday gatherings when I was younger. How I miss her......

Ingredients
  • 1 can eagle brand condensed milk
  • 1/3 cup lemon juice
  • 1 small can crushed pineapple drained
  • 1 small can coconut
  • 1 cup chopped pecans
  • 1 medium container cool whip room temperature
  • 2 graham cracker pie crust

Directions
  1. In large mixing bowl blend together the milk and lemon juice stir in the pineapple, coconut and pecans then fold in the cool whip. Divide between the two pie crust and refrigerate at least 5 hours.

Brings back memories of my mother too. Actually I have found that I am finding quite a few recipes here that remind me of my mother. She's been gone 35 years and I was just 18 when she died so although I do remember her wonderful cooking and I did get some great recipes, we certainly didn't get to share them once I really started cooking. It really puts a smile on my face when I see a recipe that reminds me of her. Thanks so much for sharing.
