Ingredients

How to make it

  • brush pepper halves with some olive oil
  • place halves cut side down on an unheated reck of a broiler pan
  • flatten slightly, splitting if necessary
  • broil 3 inches from the heat until surfaces are charred
  • place peppers in a brown papper bag .. let cool
  • removed charred skins..discard.
  • cut into strips
  • in a medium bowl ;combine the 1/4 cup olive oil, vinegar, and seasonings... mix well
  • add peppers cover and refrigerate for at least 2 hours or up to 24

    --Roasted peppers are great in sandwiches if you don't have any good tomatoes around.
    --Put on top of curly endive and sprinkle with walnuts and a little feta cheese for a vegetarian side dish--I've brought this to several potlucks and had lots of good feedback.
