Marinated Roasted Peppers Recipe

Ingredients

6 - 8 medium red bell peppers.. halved and seeded

olive oil

1/4 cup olive oil

2 TBSP. vinegar

1/2 teasp. spice islands Pasta and Pizza Italian blend spice mix

( this comes in a disposable grinder) set on medium- fine

salt and pepper to taste

Directions

brush pepper halves with some olive oil

place halves cut side down on an unheated reck of a broiler pan

flatten slightly, splitting if necessary

broil 3 inches from the heat until surfaces are charred

place peppers in a brown papper bag .. let cool

removed charred skins..discard.

cut into strips

in a medium bowl ;combine the 1/4 cup olive oil, vinegar, and seasonings... mix well

add peppers cover and refrigerate for at least 2 hours or up to 24

--Roasted peppers are great in sandwiches if you don't have any good tomatoes around.
--Put on top of curly endive and sprinkle with walnuts and a little feta cheese for a vegetarian side dish--I've brought this to several potlucks and had lots of good feedback.
