How to make it

  • In a large skillet, sauté sliced onions in butter until nicely golden. In bowl, mix together eggs, sour cream and seasonings; add egg mixture to sautéd onions. Add gruyere cheese and gently stir mixture to blend ingredients. Pour into a 10-inch glass pie plate lined with a pie crust (I like to pre-bake my crust for 8 minutes at 350 degrees before adding the filling). Top quiche with the parmesan cheese. Bake at 350 degrees for 20 minutes; reduce heat to 325 degrees and bake another 15 minutes.
  • Note: if you omit the pie crust, just pour the filling into a well buttered 10-inch glass pie plate as bake as directed.

    Sounds great. It has been added to my "must try" list. By the way, within the past year our local markets have begun to sell "sweet onions" all-year-round. They don't call them Vidalias, but they sure look and taste like them.

    My favorite onion pie ever and I'm so with you on the refrigerated crusts. I used to rave about mom's crust and she would labor over them every year and then one year after a particularly wonderful piece of pie, she pulled me aside and confessed it was P*******Y! I was so shocked.

    This sounds wonderful ! I also make an onion pie but I use brown sugar in it. My brother LOVES it and he doesn't even LIKE onions ! Might try to slide this one in him, too. ;o)

    This is one of my favorite recipes, Mom! And it's so versatile; you can really use anything in place of the Vidalias. And if you are eating on a low carb plan, you can just omit the crust, and it's every bit as good.
