Buttermilk Walnut Cake Recipe

Buttermilk Walnut Cake Recipe
A cake well complemented by ice cream or whipped cream. I'll admit to eating it for breakfast warm with butter. But you didn't hear that from me.

Ingredients
  • 3 cups of all purpose flour sifted
  • 2 cups of sugar
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1 cup of butter, melted and cooled slightly
  • 4 large eggs
  • 1 cup of buttermilk
  • 2 tsp of vanilla extract
  • 3/4 cup of chopped walnuts
  • 3/4 cup of ground walnuts
  • glaze:
  • 1 cup of sifted confectioner's sugar
  • 1 tsp of vanilla extract
  • 1 tbsp of lemon juice
  • 1 tbsp of orange juice

Directions
  1. Preheat oven to 300 degrees.
  2. Grease and flour a 9-inch springform pan.
  3. Mix together the flour, sugar, baking powder, baking soda and salt.
  4. Stir well.
  5. Add the remaining ingredients and beat well.
  6. Pour into the pan and bake one hour and fifteen minutes, or until a knife inserted in the center of the cake comes out clean.
  7. It may take as little as one hour or up to one hour and 30 minutes to cook through.
  8. Meanwhile, make the glaze which must be applied the minute the cake is removed from the oven.
  9. To make glaze, mix all the ingredients and stir very well. Pour over hot cake, might even return cake to oven for less than 20 seconds to make sure it absorbs the glaze.
  10. Serve it warm with ice cream.
  11. When it is cool completely you can freeze this very well, when double wrapped, first wax paper and then foil.

Sounds delicious ~ even the part of having this for breakfast....

Another good one I gotta save.

Lawd, I haven't baked one of these in a long time. It was always a favorite. My grandmother always made double batch so she could make muffins for the kids.
