Yukon Gold  Sweet Potatoe Back Recipe
I do not remember where i got this recipe but I have been making it on and off for at least 15 yrs or so... It pairs well with pork...

Ingredients
  • 2 sweet potatoes peeled and cubed (2 inch pieces)
  • 4 yukon gold potatoes (not peeled and cubed 2 inches)
  • 1/4 cup of olive oil (or less)
  • 2 tablespoons of rosemary (not ground, smash it up in your hands)
  • 2 to 3 cloves chopped garlic
  • salt and pepper to taste

Directions
  1. Heat oven to 400 degrees
  2. in baking dish mix all ingredients until well coated
  3. bake for 35 to 40 min or until browned and cooked
  4. enjoy

I make a similar recipe except I slice the potatoes to look like fries. The grandkids love it and don't miss the fact that they are not deep fried.


Sounds interesting. I love sweet taters but I have never had anything like this! I'll have to give this a try.
