Yukon Gold Sweet Potatoe Back

- 2 sweet potatoes peeled and cubed (2 inch pieces) shopping list
- 4 yukon gold potatoes (not peeled and cubed 2 inches) shopping list
- 1/4 cup of olive oil (or less) shopping list
- 2 tablespoons of rosemary (not ground, smash it up in your hands) shopping list
- 2 to 3 cloves chopped garlic shopping list
- salt and pepper to taste shopping list
How to make it
- Heat oven to 400 degrees
- in baking dish mix all ingredients until well coated
- bake for 35 to 40 min or until browned and cooked
- enjoy

I make a similar recipe except I slice the potatoes to look like fries. The grandkids love it and don't miss the fact that they are not deep fried.
