Sweet And Sour Chicken Thighs And Carrots

- 8 chicken thighs. I throw in some legs too. shopping list
- 2 tsp. paprika shopping list
- 1-1/4 tsp. cinnamon shopping list
- 3/4 tsp black pepper shopping list
- 2 table spoons of olive oil shopping list
- 2 large onions halved and cut into quarters shopping list
- 1-1/2 pound carrots cut into 1 inch pieces. shopping list
- 3 cloves of chopped garlic shopping list
- 3 teaspoons of salt shopping list
- 3/4 cup of water shopping list
- 1/4 cup lemon juice shopping list
- 3 tablespoons of honey. shopping list
- flat leaf parsley and or cilantro as a garnish. shopping list
How to make it
- Rinse and pat dry chicken
- stir together salt paprika and cinnamon and pepper and rub onto chicken
- Heat oil in a large flat pan and brown chicken each side for about 5 minutes per side. This may take 2-3 batches to do. Then put chicken on a seperate plate.
- Sprinkle any remaining cinnamon, and dry ingredients onto chicken.
- Put carrots, onions and garlic in pan and cook about 1-2 minutes.
- Mix water. lemon juice and honey and stir until well blended.
- Return chicken to pan on top of veggies and cook. Pour liquid over chicken. ( I usually heat the honey in the microwave as the water and lemon juice mix better that way.)
- Cover and cook about 25-30 minutes.
- Serve on a bed of rice or cous cous with garnish.
- Enjoy
