Ingredients

How to make it

  • Place potatoes in a large saucepan; add just enough lightly salted water to cover
  • Bring to a boil
  • Reduce heat; cover and simmer about 15 mintes
  • Add peas to potatoes and cook until peas and potatoes are tender
  • Drain; toss with oil
  • Meanwhile in a small saucepan, melt butter over medium heat
  • Add leek; cook stirring 5 to 7 minutes or until tender
  • Add mint, salt and pepper; mix well
  • Place potato mixture in a serving bowl
  • Pour leek mixture over vegetables; toss gently to coat
  • Note: 1 C of sliced green onions can be used in place of leeks, volume will be slightly less

    Looks great. I love all of those veges. I sure have to try them like this. It's great to add a couple of sprigs of mint to the new potatoes when you boil them as well. Doesn't make them taste minty, but gives then a really nice taste.
