Ingredients
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup CRISCO
  • 3/4 cup milk
  • Prepared filling - dried apricots, dried peaches, dried apples, prepared according to package directions (sweetened to taste)
  • May use chocolate filling, preserves, or your choice of filling
  • NOTE: LOTS OF "explaining" IN THE DIRECTIONS, BUT YOU WANT THE PERFECT FRIED PIE! :)

Directions
  1. In large bowl, place flour, baking powder, salt, sugar
  2. Whisk all together
  3. Cut in CRISCO as in a pie crust with pastry blender or fork
  4. Add milk, stir and "gather up" as in pie crust pastry
  5. Chill for a few minutes
  6. Roll out like pastry, fairly thin
  7. Cut into circles*, (the lid of the Crisco can is perfect)
  8. Place choice of filling on one half of the circle, not quite going to the edge
  9. Bring other half over the filling to the edge
  10. Seal the edges of the pastry with a fork dipped in water
  11. Meanwhile heat about a half inch of Crisco solid shortening in an iron skillet, (preferably) and carefully
  12. Lift pies with a spatula and *carefully, carefully* place in hot oil
  13. Watch *carefully*, and turn when golden brown
  14. Watch *carefully * again, and when other side is golden brown
  15. remove with spatula
  16. Place on paper towel to drain
  17. Sprinkle each cooked fried pie with granulated sugar
  18. *MAY CUT DIFFERENT SIZE CIRCLES, USING A BISCUIT CUTTER, SAUCER, ETC.
  19. These are simply delicious! Hard to explain how very good! Just try them and see!
