Ingredients

1 box yellow cake mix

1 cup oil

4 eggs

11-oz can mandarin oranges, drained(save juice!)

1 cup chopped pecans

**Cotton Patch Cake Frosting**

-------------------------------------------------------------

1 large container Cool Whip

2 small packages vanilla instant pudding(or 1 large package)

1 medium can crushed pineapple, drained well

nuts or coconut(optional)

Directions

Preheat oven to 350 degrees F

Beat eggs, oil and juice from oranges

Add cake mix and beat for 4 minutes

Fold in oranges and nuts

Pour into 2-9inch greased & floured pans

Bake at 350 degrees for 25 minutes or until done

Frosting Directions**

Mix all frosting ingredients together and ice cake

Keep in refrigerator

I made this cake and took it to a Ladies Tea at Church yesterday. It was the first cake gone!! The flavors were so fresh and the icing such a change from heavy frostings the woment just had to try it! I've been asked for the recipe from several women there. I think Cotton Patch Cake will be in attendance at many of our Church get togethers for a long time.
