Portobellos with Provolone Bacon and Spinach

- 3 portobello mushrooms, cleaned, stems removed shopping list
- 4 ounces fresh spinach (1/2 a bag) chopped shopping list
- 3 slices thick-sliced bacon, chopped shopping list
- 1/2 medium red onion, finely diced shopping list
- 1/4 red bell pepper, finely diced shopping list
- 2 cloves garlic, minced shopping list
- 1/2 cup provolone cheese, finely diced shopping list
- Hot Shot, a hefty sprinkle shopping list
- shredded mozzarella cheese shopping list
How to make it
- In skillet, saute bacon until nearly crisp. Add onion, red pepper, garlic and saute until soft. Add spinach and Hot Shot and continue cooking until spinach is just wilted. Transfer to bowl and mix in provolone well.
- Mound mixture into mushrooms, cover with shredded mozzarella, and bake at 450 until cheese is golden brown.
- Can also do on grill!
