Ingredients

16 oz. (or larger) can of chickpeas

1 lg. or 2 c. grape tomatoes

Seedless cucumber

2 Scallions

Fresh basil

Baby organic greens, romaine or whatever you like

Balamic vinegar

Extra Virgin Olive oil

Directions

Drain & rinse chickpeas

Wash & slice tomatoes

Peel & slice cucumber

Wash & slice cukes

Wash & chiffonade basil

Wash & drain greens

Add all veggies to lg. salad bowl.

Add vinegar & olive oil to taste with ground pepper.

Enjoy!

Yeah this is my favourite, i do a non-vegetarian version sometimes and add a tin of tuna, but its still just as great without it. Chickpeas are win. :)
