Nigellas Fried Shrimp Cakes Recipe
Nigella Lawson's recipe taken from The Food Network website. I served these with cocktail sauce for dipping. Prep time includes standing time. Nigella's instructions are pretty simply written, but you will need to heat the oil, of course. :)

Ingredients
  • 1/2 pound peeled and deveined shrimp, minced
  • 1 garlic clove, minced
  • 2 scallions, white and green parts, minced (I used 3)
  • 1/2 tsp. salt
  • 1/2 cup all purpose flour
  • 4 tsp. sherry
  • Olive oil for frying (I used a canola/vegetable blend)

Directions
  1. Process or blend the shrimp with the garlic, scallions, salt, flour, sherry and enough water to make a thick batter (I would say I used 4 to 5 tablespoons). Let stand, covered with plastic film, for 1 hour. Then fry, in drops of 1 heaping teaspoon, into the oil poured to a depth of 2" in a pan, for about 1 minute each side, or until golden brown. Drain on paper towels. (I did heaping tablespoons for about three minutes each side).
