Kudzoo Quiche from Zoo Atlanta Cookbook

- 1 cup heavy cream shopping list
- 3 eggs beaten shopping list
- 1 cup young, tender kudzu leaves & stems, chopped shopping list
- 1/2 teaspoon salt shopping list
- pepper to taste shopping list
- 1 cup mozarrella cheese shopping list
- 9-inch unbaked pastry shell(*Refer to Mama's pie crust recipe, or buy one if preferred) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Mix all ingredients and turn into pie shell.
- Bake for 35-45 minutes, or until set.
- Serves 4 - 6

Dang! You deserve a 5 for coming up with a creative way of getting rid of Kudzu...I think TN is using Goats...:)

I use to go to a kudzu Festival and they would have a lot of recipes made with kudzu, one of my favorites is the kudzu jelly. Your recipe sounds wonderful!

I have never heard of eating kudzu...rml is right, we use goats in TN. LOL But the pie does sound good! Thanks for sharing!
