Recipe adapated from a Portuguese restaurant. Very garlicky and spicy. Great if you love that stuff !

Ingredients
  • Olive oil
  • 1/4 cup chopped garlic
  • 2 cup red onion chopped
  • 2 cups white onions chopped
  • 8 tomatoes cut up
  • chili peppers to taste
  • salt and pepper to taste
  • 4 cups tomato juice
  • 2 lbs shrimp shelled
  • Garnish:
  • green onions chopped
  • Fresh chopped parsley
  • Fresh chopped cilantro

Directions
  1. In a heavy duty pot saute in oil, the onions translucent and then the garlic, red chopped chili peppers to taste and add tomatoes and salt and pepper.
  2. Cook and stir to blend flavors
  3. Add the tomato juice along with the shrimp and lower heat to a simmer and cook till shrimp are done.
  4. In a soup bowl, place some of the shrimp along with cooking liquid
  5. Garnish with green onions, parsley and corriander
