I read that the "chess" is actually a deriviative of cheese because when the acidic lemon hits the mixture it seems to curdle like cheese. But, we both know how smooth these pies turn out. I've bookmarked this one to try.

It really is a dream Borinda. Yes there is a slight tendancy to curdle. Chess is Cheese, who would have thought, and always understood it to be some ancient war game ;) I will have to try yours too - let me know how it turns out if you are able?

FIVE FORKS.... After chilling for a day the flavor became more intense and then we REALLY enjoyed this pie. I'd make it for guests in a heartbeat and know they'll love it as well.
So - four forks day 1, hours after out of the oven. Five after a day of chilling and the flavor develops. Then, a huge smile of bliss.
