Not - Only - In - Your - Dreams Cakes Recipe
Who doesn't love their own little dessert? These are super-yummy, guilt free plated chocolate cakes from Chef Devin Alexander. Serve with a raspberry coulis if desired.

Ingredients
  • 1/4 cup unsweetened applesauce
  • 1 tbsp vanilla extract
  • 4 large egg whites
  • 3/4 cup packed brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/4 teaspoon instant espresso powder
  • 1/2 teaspoon salt

Directions
  1. Preheat the oven to 350° F, and generously coat four 31/2-inch-diameter ramekins with cooking spray.
  2. Place them side by side in an 8 X 8-inch baking pan. Add water to the pan until it reaches halfway to the top of the ramekins and set aside.
  3. Mix the applesauce, vanilla and sugar in a large mixing bowl until well combined.
  4. Add the cocoa powder, espresso, and salt, stirring until just combined and no lumps remain.
  5. Beat egg whites to medium-stiff peaks, fold gently into chocolate mixture.
  6. Bake for 22 minutes, until a toothpick inserted in the center comes out a bit wet.
  7. Carefully transfer the ramekins from the water bath to a cooling rack. Cool for about 10 minutes.
  8. Invert each ramekin onto a dessert plate.
  9. Let stand for 1 minute then lift off the ramekin and serve.
