Ingredients
  • 10 sprigs parsley (I use dried and about 3 Tbsp. Spoons or a palm full)
  • 1 clove chopped garlic
  • ¼ chopped onion
  • 1 package (1 Cup) chopped frozen spinach or Swiss chard (squeeze out the water)
  • Salt (optional) I don’t use much salt and you get it from the soup stock.
  • Pepper to taste
  • 1 ½ Cups bread soaked in soup stock (Chicken bouillon works great)
  • ½ cup dry bread crumbs
  • 3 eggs beaten
  • ½ Cup grated parmesan cheese
  • Olive Oil

Directions
  1. Fry onion, garlic, and parsley (if using fresh parsley) in olive oil until tender
  2. Add bread to soup stock/bouillon squeeze out as much liquid a possible. You now have a bread mush that needs to be chopped or broken up so that it mixes with the other ingredients.
  3. Add bread, spinach, onion & garlic, parsley, cheese, and beaten eggs (all ingredients) and mix well in a bowl.
  4. Cover with plastic wrap and chill over night in the refrigerator.
  5. Form by rounded Tbsp spoons or roll into 3” “fingers” and roll lightly in flour (If you don’t want to use flour don’t they work out well with out the flour)
  6. Put in a single layer on floured baking sheets.
  7. Chill until ready to boil
  8. Cook in lightly salted boiling water (or soup stock) 4-5 minutes (when they float to the top of the water they are done.)
  9. Drain and serve as a main dish with a meat sauce or I like them as a side dish.
