These onions are a traditional accompaniment to pibil (Hand dug pit BBQ) dishes and found on virtually every table throughout the Yucatan Peninsula in Mexico. They will keep for a long time in the refrigerator.

I have heard of these onions before but never got the recipe.
These sound great for my BBQ chicken thank you for posting this unique and easy recipe with all my favorite spices and herbs. I can almost smell them toasting ah so fragrant.
