Pickled Red Onions For Achiote Chicken

- 1 medium red onion, thinly sliced. shopping list
- 5 black peppercorns shopping list
- 3 allspice berries shopping list
- ¼ Tsp cumin seeds shopping list
- ¼ Tsp dried oregano shopping list
- 2 cloves garlic, minced shopping list
- 1/3 cup white vinegar shopping list
- salt shopping list
How to make it
- Place Onions in a bowl and pour boiling water over them. Let sit 1 min and drain.
- Toast all dry ingredients in a skillet over medium low heat. Transfer to a spice mill and coarsely grind.
- Place Onions in a fruit jar with coarsely ground spices. Add Garlic, Vinegar and a couple pinches of Salt.
- Top off with water to barely cover. Let stand at least 2 hours to blend flavors. Refrigerate. Makes about 1 cup.
