Warm-Open Faced Pita Sandwich

- 1 tablespoon preferred frying oil shopping list
- 1 tablespoon flour shopping list
- 1 can diced tomatoes, juice drained but reserved shopping list
- 1 cup sliced mushrooms shopping list
- 1/2 small onion diced shopping list
- 2 cloves garlic, crushed and minced shopping list
- 1 cup fat free half n half shopping list
- 1 ripe avocado, pitted and sliced shopping list
- 4 slices cheese- (I prefer muenster or smoked gouda)* opt. shopping list
- 4 whole wheat pitas shopping list
- *Optional, shredded chicken or turkey shopping list
- salt and pepper shopping list
How to make it
- Turn on broiler for oven
- Slice mushrooms, dice onions, and prepare garlic
- In a medium frying pan heat oil and then flour.
- Add onions. Fry until translucent.
- Add garlic, tomatoes and mushrooms. Fry until vegetables are tender.
- Add shredded chicken or turkey if desired.
- Add half n half. Bring mixture to a gentle boil.
- Add reserve tomato juice until mixture has a pinkish color.
- Heat through. Mixture should be thick and not runny. If so add more cream or flour.
- Prepare pitas on cooking sheet by placing flat onto the sheet.
- Spoon mixture onto each pita. Do not overfill, the pita works best if it can be folded over, New York Cheese Pizza Style.
- Add sliced avocado to each pita, 4-5 thin slices is plenty.
- Lastly add cheese.
- Place sheet in oven under broiler to melt cheese and crisp the pita edges.
- Depending on oven it takes 2-3 minutes.
- May be messy so serve with napkins! Enjoy
