Ingredients
  • 1 tablespoon preferred frying oil
  • 1 tablespoon flour
  • 1 can diced tomatoes, juice drained but reserved
  • 1 cup sliced mushrooms
  • 1/2 small onion diced
  • 2 cloves garlic, crushed and minced
  • 1 cup fat free half n half
  • 1 ripe avocado, pitted and sliced
  • 4 slices cheese- (I prefer muenster or smoked gouda)* opt.
  • 4 whole wheat pitas
  • *Optional, shredded chicken or turkey
  • Salt and pepper

Directions
  1. Turn on broiler for oven
  2. Slice mushrooms, dice onions, and prepare garlic
  3. In a medium frying pan heat oil and then flour.
  4. Add onions. Fry until translucent.
  5. Add garlic, tomatoes and mushrooms. Fry until vegetables are tender.
  6. Add shredded chicken or turkey if desired.
  7. Add half n half. Bring mixture to a gentle boil.
  8. Add reserve tomato juice until mixture has a pinkish color.
  9. Heat through. Mixture should be thick and not runny. If so add more cream or flour.
  10. Prepare pitas on cooking sheet by placing flat onto the sheet.
  11. Spoon mixture onto each pita. Do not overfill, the pita works best if it can be folded over, New York Cheese Pizza Style.
  12. Add sliced avocado to each pita, 4-5 thin slices is plenty.
  13. Lastly add cheese.
  14. Place sheet in oven under broiler to melt cheese and crisp the pita edges.
  15. Depending on oven it takes 2-3 minutes.
  16. May be messy so serve with napkins! Enjoy
