Smoky Stuffed Bacon Chipotle Cheeseburgers Recipe

Big thick juicy, cheesy, bacon cheeseburgers...but the cheese and bacon are inside!

Ingredients
- 1 1/2 pounds ground round
- 1/2 cup shredded cheddar cheese, Sargento's shredded chipotle cheddar
- 4 slices bacon, cooked crisp and crumbled
- 1 tablespoon mayonnaise
- Montreal steak seasoning, to taste
- 1 large vidalia onion, sliced 1/2" thick
Directions
- Divide beef into 8 equal portions and make 8 very thin patties. Set aside
- Mix chipotle cheddar, crumbled bacon, and mayo. Mix well with fork until it comes together.
- Divide cheese mixture among 4 patties - compacting cheese in centers and leaving a 1/2" edge all around. Top each with another patty and carefully, but firmly seal meat all around enclosing cheese completely inside burgers.
- Season each burger very well on each side with Montreal steak seasoning.
- Grill burgers until cheese starts to melt inside. Rub onion slices with olive oil, sprinkle with Montreal steak seasoning and grill alongside burgers.
- Serve burgers and onions on good toasty, crusty rolls with a little barbecue sauce, tomatoes, and lettuce.
