Lemon Cooler Cookies

- 1c bleached all-purpose flour shopping list
- 3/4c cofectioners' sugar divided into 1/4c and 1/2c measures shopping list
- 1tsp. finely grated lemon zest shopping list
- 1 stick(8Tbs.salted butter,softened shopping list
- 1/4tsp vanilla extract shopping list
How to make it
- Adjust oven to lower-middle position and heat oven to 350 degrees
- Mix flour,1/4c conf. sugar and lemon zest in a medium bowl. Add butter and vanilla;beat(or simply mix with hands0until ingredients form a dough.
- Drop coookie dough by generous tsps. onto a parchment-lined or silpat-lined cookie sheet. Bake until cookie bottoms are golden brown,about 15 mins. Transfer cookies to a wire rack to cool completely.
- Place remaining 1/2c conf. sugar in qt. size zip loc bag.. Working a dozen at a time,drop the cookies into the sugar;shake to coat. The lemon cookies can be stored in an airtight container for upto a week!
