Lemon Dainty Pudding Recipe
This lovely dessert was my Father's favorite... It is taken from a little cookbook from the 1940's.

Ingredients
  • 3 Tbsp Crisco shortening
  • 1/8 tsp salt
  • 3/4 cup sugar
  • 2 Tbsp flour
  • 2 eggs, separated
  • 1 cup milk
  • Juice and grated rind from 1 lemon

Directions
  1. Cream shortening and blend in sugar and salt.
  2. Add flour, and blend until smooth and creamy. Add beaten egg yolks,
  3. milk, lemon juice and rind. Beat mixture until light and smooth.
  4. Fold in STIFFLY beaten egg whites.
  5. Place in greased 8x8 baking dish and set in pan of hot water.
  6. Bake at 350 degrees for 25 to 30 minutes, until pudding is a delicate brown.
  7. Pudding should be tender sponge on top, with golden-yellow sauce underneath.
  8. Pudding may be baked in individual ramekins, if desired.
