Lemon Dainty Pudding

- 3 Tbsp Crisco shortening shopping list
- 1/8 tsp salt shopping list
- 3/4 cup sugar shopping list
- 2 Tbsp flour shopping list
- 2 eggs, separated shopping list
- 1 cup milk shopping list
- juice and grated rind from 1 lemon shopping list
How to make it
- Cream shortening and blend in sugar and salt.
- Add flour, and blend until smooth and creamy. Add beaten egg yolks,
- milk, lemon juice and rind. Beat mixture until light and smooth.
- Fold in STIFFLY beaten egg whites.
- Place in greased 8x8 baking dish and set in pan of hot water.
- Bake at 350 degrees for 25 to 30 minutes, until pudding is a delicate brown.
- Pudding should be tender sponge on top, with golden-yellow sauce underneath.
- Pudding may be baked in individual ramekins, if desired.
