Irish Yellow Broth

- 2 tbsp. butter shopping list
- 1 onion, finely choppped shopping list
- 1 celery stick, finely chopped shopping list
- 1 carrot, finely chopped shopping list
- 1/4 cup plain flour shopping list
- 4 cups chicken stock shopping list
- 1/4 cup oatmeal shopping list
- 4 oz. spinach, chopped shopping list
- 2 tbsp. cream shopping list
- salt and pepper shopping list
How to make it
- Melt the butter in a large saucepan. Add the onion, celery and carrot and cook for about 2 minutes until the onion is beginning to soften.
- Stir in the flour and cook gently for a further minute stirring constantly. Pour in the chicken stock, bring to the boil and cover. Reduce the heat and simmer for 30 minutes until the vegetables are tender.
- Stir in the oatmeal and chopped spinach and cook for a further 15 minutes, stirring from time to time.
- Stir in the cream and season well.

Excellent! I've made a similar soup but using leeks. Next time I make it, I'll try spinach and I'm sure it will taste delicious. I've rated your recipe 5!
