How to make it

  • Melt the butter in a large saucepan. Add the onion, celery and carrot and cook for about 2 minutes until the onion is beginning to soften.
  • Stir in the flour and cook gently for a further minute stirring constantly. Pour in the chicken stock, bring to the boil and cover. Reduce the heat and simmer for 30 minutes until the vegetables are tender.
  • Stir in the oatmeal and chopped spinach and cook for a further 15 minutes, stirring from time to time.
  • Stir in the cream and season well.

    What a nice recipe! I'm definitely going to make this. What a great addition to the recipe file for a new recipe which should help lower cholestrol! Do you have any idea which kind of oatmeal would work best in this recipe? Steel cut, Scottish Oats or can one just use the old fashioned oatmeal like Quaker Oats?

    Excellent! I've made a similar soup but using leeks. Next time I make it, I'll try spinach and I'm sure it will taste delicious. I've rated your recipe 5!
