How to make it

  • Place Asparagus in a metal or bamboo steamer and steam until crisp tender. (7- 8 minutes) Plunge into an ice water bath, drain, dry and set aside.
  • Place all of the ingredients (except the Greens and Asparagus) in a blender or food processor and blend until thoroughly mixed. If the dressing seems too thick, add more water or yogurt. Adjust salt to taste. Place the mixed greens in 6 bowls and divide Asparagus evenly among the bowls.. Add the dressing to taste.

    I love champagne vinegar and keep it on hand for just the reason you stated. I adore spring greens and avocado - two of my faves, too. But that dressing is sensational, Jim - so creamy and loaded with lovely flavor components. Complex and yet subtle paired with the verdant zip of serranos and the desired heat of the serranos. I am impressed. Again. Moving to my short list because I am so in the mood for something like this. Thanks, m'dear! ~Vickie
