Maryland Deviled Crabcakes

- 1/2 c. half and half shopping list
- 1/2 c. mayonnaise shopping list
- 1 large egg white shopping list
- 1 1/2 t. dry mustard shopping list
- 2 t. worcestershire sauce shopping list
- 2 t. fresh lemon juice shopping list
- Tabasco sauce to taste (be generous!) shopping list
- 2 green onions, minced shopping list
- 1/2 small red bell pepper, seeded and minced shopping list
- 1/2 t. salt shopping list
- 1 pound fresh MD, VA, LA or TX lump crabmeat shopping list
- 1 c. fine dry bread crumbs (divided use) shopping list
- 1 T. butter, melted shopping list
- 1/4 c. peanut oil shopping list
- 2 T. butter shopping list
How to make it
- In a bowl, whisk together the half-and-half, mayo and egg white until well-blended. Add the dry mustard, Worcestershire, lemon juice, Tabasco, green ions, bell pepper and salt; stir until well-blended. GENTLY fold in the crabmeat and 1/2 c. of the bread crumbs until well blended.
- In a small bowl, combine the remaining bread crumbs with the melted butter and mix well.
- Divide crab mixture into 8 equal portions and shape into patties. Coat each in the breadcrumb and butter mixture and coat lightly.
- Fry crabcakes in oil and butter and brown on both sides. Serve immediately.
